It’s probably a good thing that I only got one piece of this s’mores chocolate chip cookie dough bar because if it were up to me, I would have cleaned the whole pan. And that’s not super healthy, right?
Weren’t we just talking about how I’m trying to cut back on sugary drinks??
And the reason is because I get my sugar in plenty of other, more satisfying ways.
You see, I think that dessert should be a lovely, treasured experience.
I personally like to create my own desserts (store bought cookies vs homemade cookies?? no competition!). When you create your own sweet treats, there is work and care and love involved. And sugar and butter, of course.
I create my own treats because I enjoy it. I think the work that goes into it makes it harder to mindlessly gobble down the whole batch…because it takes work to make another one!
Giving away part of the treats also benefits you because who can hate someone who is giving them free dessert? This is how normal people make friends, right? No? Just me?
S’mores Chocolate Chip Cookie Dough Bars
This particular dessert is one that I’ve made many times, starting back in Minnesota in the form of a skillet cookie which I fed to my blends who were visiting. Then in a bread pan (which my friend Mellissa dug riiight into with a fork). After that, we made it for Dave’s family for the fourth of July where despite over-baking it…the marshmallows caramelized and made this new delicious creation.
The most recent go at the recipe (and possibly my favorite) was while Dave was still fun-employed (get it? f-unemployed?) and we had a baking day together. Super romantic. I highly recommend it. (remember when we made the cake pops? it was that day. )
Needless to say, I am quite the fan of these s’mores cookie dough bars. It’s just an insanely decadent way to have dessert. Especially when you don’t over-bake it and an it’s all ooey-gooey-goodness and you audibly “mmmmmmm” and start saying weird things like you want to take a bath in the bars. (<-which doesn’t make sense, obviously. they are just so good you get a little loopy.)
I can also tell you that these delightful bars of happiness are quite the crowd pleaser, as many a crowd has consumed them.
Part of my pride in these bars comes from the fact that the cookie dough recipe is also mine.

Okay, enough rambling and excuses for my sweet tooth. I will share the recipe now.
You will need:
For the crust:
1 stick of butter (1/2 cup)
2 cups graham cracker crumbs
For the bars:
layer of jumbo marshmallows (about 2 dozen)
chocolate chip cookie dough (I used this classic chocolate chip cookies recipe here)
Mix the butter and graham cracker crumbs together and press into bottom of pan for crust.
Layer jumbo marshmallows on top.
Follow the directions for the cookie recipe. Carefully spread dough on top of mallows (this takes patience, but is totally worth it).
Bake for 20-25 minutes at 350 degrees F or until marshmallows are bubbling out and the edges of the dough are slightly browned.
Share with friends and family so you don’t go into a sugar coma eating the whole pan yourself.

- 8 TBS of butter, melted (1 stick)
- 24 jumbo marshmallows (approximately)
- 1 cup butter (room temperature)
- 1 cup sugar
- 1/4 cup brown sugar
- 2 tsp vanilla extract
- 2 eggs
- 2 cups all purpose flour
- 1 tsp baking powder
- 3/4 tsp salt
- 1 cup semi-sweet chocolate chips
- Mix the butter and graham cracker crumbs together and press into bottom of pan for crust.
- Layer jumbo marshmallows on top.
- Follow the directions for the cookie recipe. Carefully spread dough on top of mallows (this takes patience, but is totally worth it).
- Bake for 20-25 minutes at 350 degrees F or until marshmallows are bubbling out and the edges of the dough are slightly browned.
- Share with friends and family so you don’t go into a sugar coma eating the whole pan yourself.
