I cut off last week’s Two Weddings and a Birthday WIAW (or What I Ate Wednesday) because it was getting suuuper long, but I left out some tasty details I really wanted to share.

I decided to chop them up and put them on my morning toast. At the daddio’s house a couple of weekends ago, my breakfasts consisted of toasted sandwich thins topped with Jif creamy peanut butter. And sweet blueberry almond deliciocity.
That was pretty much all the food that existed in the daddio’s house aside from an unlimited diet dew and popcorn supply (which is pretty awesome for me). Dave’s mom was sweet enough to send Dave over with some healthy eats such as spinach that I could munch on while in town. (Yes, Dave and I stay in separate locations when we go back to Nebraska.)
Another eat I had over the weekend was Jimmy Johns. Who doesn’t love a good sandwich? Plus, their bread is uh-mazing…both the whole wheat bread and white loaf. I added a ton of spinach to the sandwich and found some old childhood favorite chips…Fritos chili cheese!! And much like when I was a kid eating these things, I put them right in the sandwich.
After a very long and crazy weekend, Dave and I met his parents, sister and adopted brother at a new food place, VooDoo Taco. I had no idea what to expect and hadn’t even heard of the place. I ended up being pretty blown away.
The atmosphere was really chill (and a little creepy…but in a humerous voodoo doll way..if that even makes sense..). We checked out our little brochure-like menus to discover a wide variety of creative taco options, then went to the counter to place our order. We also got some chips and salsa for an appetizer. The chips were pretty salty, but the salsa was good if you like some spice.
I picked the Mahi Mahi tacos for dinner which had a tangy and spicy taste.
I definitely enjoyed my messy taco and Dave’s alligator taco wasn’t bad either. Yeah, there was alligator meat in his taco. Seriously there are so many unique and creative food/flavor combinations at VooDoo Taco!
And probably the most interesting part of the meal for me was our dessert: a VooDoo brownie. I’ve had salted desserts before, but never one with a savory, salty and spicy flavor! It was chewy and delicious, although it took me a minute to get used to a spicy brownie.
They also offer breakfast tacos…which I definitely want to try. I have a strong feeling we will be back the next time we are in Omaha! It was the perfect, relaxing and fun ending to the crazy weekend.
